Black Beans with a Puerto Rican Twist

Ingredients

2 cups dried black beans 1 tbsp. chopped onion
8 cups water    1 tbsp. sweet Puerto Rican peppers
½ lb. cooking ham*   ¼ tsp. chopped garlic
¼ tsp. salt  2 tbsp. chopped cilantro
1 bay leaf  1 tbsp. corn oil
¼ tsp. oregano White rice, cooked

Instructions

  • Wash beans and soak overnight.
  • Discard water and place beans in large pot.
  • Add fresh water and cook on low for 1 hour.
  • Cut ham into small cubes and sauté for 5 minutes.
  • Add remainder of ingredients (excluding the beans and rice) and sauté for 3 minutes.  Add all ingredients in step four into beans that have cooked for 1 hour.  Cook for an additional 30 minutes.
  • Serve with white rice.

Yield: 8 servings.  Serving size: ¾ cup.  235 calories, 17.7 g protein, 5 g fat, 30.2 g carbohydrate, 16.8 mg cholesterol.  NOTE: This dish has lots of iron and fiber.

*Use low fat ham, or rinse the ham.
